Description

Eye: very dark golden yellow. Nose: candied fruits and honey.
Mouth: the finished wine presents a remarkable balance, concentrated and very long. This wine can be kept for more than 50 years.
Sommelier’s advice: Vin de Paille is drunk more like a dessert than with a dessert. However, it can be served with gingerbread, Christmas pudding or orange cake.
Grape variety(ies): 100% Marsanne.

Harvest: The harvest is collected by successive sorting then dried on a bed of straw for almost two months before pressing.
Soil: The technique for producing Vin de Paille finds its roots in the Hermitage vineyard. To reconnect with this tradition, Michel CHAPOUTIER has decided, since 1990, to devote part of the harvest of his Hermitage blanc to raisining on a bed of straw.
Vinification: The must obtained has a minimum concentration of 360 g of sugar per liter. After fermentation, the acquired alcoholic degree is around 15% vol. for a residual sugar content of 105 g/l.
Aging: Fermentation and aging are carried out entirely in oak barrels. Bottling takes place after 24 months of aging.
