This bottle was stored properly with sufficient mousse maintained.
On the nose for the first 30 minutes, I smelled strawberry jam, raspberry compote, hint of whipped cream, dark honey, vanilla, cooked hawthorn fruit, apricot and caramelised apple. Tertiary notes such as copper and brown sugar stepped in as the serving temperature climbed. In terms of palate, this wine offers a very vibrant, precise and balanced acidity.
On the nose after 60 minutes of bottle breathing, the aroma of matured red fruit continued and further enriched by oolong tea and spices, including cloves, black peppercorn, a hint of candied orange peel. The aroma of the 80% of blanc de blanc also surfaced and offering notes such as sea breeze, wet stones, roasted hazelnuts, yeast and brioche.
Likely at its peak right now and arguably one of the best performing rosé in this moment among others.
